Ever been to a restaurant where they make grilled pineapple? If you haven’t, it is so DANG good! Thankfully, it’s just as easy to do at home! Plus, it’s way less expensive to make it at home.

I should preface this post by saying this is not true “grilled” pineapple since it’s cooked with an air fryer. Although, that’s the beauty of this recipe. No grill is required! However, if you don’t have an air fryer, I provide grilling instructions too.

Another great thing about this recipe is it only requires 4 ingredients! I don’t know about you, but I’m all for recipes with few ingredients.

When pineapple grills, the sugars caramelize and the sweet flavors intensify. Plus, I find cooking in an air fryer keeps the pineapple juicy. This is such a yummy air fryer dessert or snack!

In the process of finding my favorite banana bread, I have made many, and this is my favorite one! Here’s a few reasons why:

  • It is made with a quick bread method meaning you only need one bowl, no mixer, and no yeast! Additionally, the ingredients are simple, and I usually always have them on hand.
  • The flavor of this banana bread is so much better because it uses butter instead of oil. I also love the hint of cinnamon.
  • If you decide to add the sugar and walnut topping, it tastes better than Starbuck’s Banana Bread. Plus, it’s a whole lot less expensive!

When I was in school, I made this one bowl banana bread on the weekends. That way, I would have a quick and easy breakfast during the week.

I still love making this for breakfast meal prep. And, I will often double the recipe, and freeze and save one loaf for later use!

So, what makes me qualified to say these are the best frosted mint brownies? Well, frosted mint brownies are one of my favorite desserts. Ever! Over the years, I have made (and eaten) my fair share of them in search of the perfect one.

While boxed brownies can be tasty, fast, and convenient, homemade brownies can really take mint brownies to a new level! Consequently, the brownies in this recipe are the perfect complement to the whipped mint frosting and dreamy chocolate glaze.

In Utah, I frequent a little bakery named Schmidt’s Pastry Cottage. They have the BEST eclairs and mint brownies. Not only do these homemade brownies taste like the brownies from Schimdt’s, but they might be even better because they can be made at home!

The inspiration for this recipe comes from my 10-year old self’s favorite book series, the Enchanted Forest Chronicles. In the first book, Dealing with Dragons, the main heroine, named Cimorene, tasks herself with making desert for a dinner party of six dragons!

Cimorene only knows how to make two desserts: chocolate mousse and cherries jubilee. Ultimately, Cimorene decides to make chocolate mouse, and she spends the whole day preparing enormous buckets of dragon-sized servings of it!

That scene left such an impression on me, and I haven’t forgotten it decades later!

I have always been intrigued by cherries jubilee, and until now, I never had it! I was inspired to finally make it when I saw one of my fellow blogger friends, Erin, make a Cherry Skillet Cake recipe. When she described her recipe as “cherries jubilee”, I knew I finally had to make the real deal!

I’m not sure where I got the idea to make these bites, but I made them often when I lived on my own and I wanted a simple, inexpensive, and healthier treat. I especially loved making them for my girl’s nights because they are so poppable and shareable! Kids also love these yummy snacks!

The frozen bites are very quick to prepare, and they only require four Ingredients! Plus, once you prepare them, you can enjoy them straight from the freezer. No thawing or ice cream scoop required. 😉
