Instant Pot Tex-Mex Mac & Cheese Top View

This yummy Instant Pot Tex-Mex Mac & Cheese is an inexpensive one pot meal that elevates an ordinary box of macaroni and cheese in about 30 minutes!

Several years ago, a friend taught me how to make this recipe for Tex-Mex Mac & Cheese. Subsequently, it quickly became one of my favorite ways to spice up an ordinary box of macaroni and cheese!

The recipe starts with a store-bought box of macaroni and cheese. Next, add several Tex-Mex ingredients (like taco seasoning, salsa, corn, beans, ground beef, and sour cream) to give the mac and cheese an amazing flavor boost! It almost tastes like a taco in a bowl.

Originally, the recipe is cooked in the microwave. Recently, I found the recipe again and decided to convert it for the Instant Pot. And it couldn’t be simpler! One of the best things about this recipe is that every thing cooks in one pot.

Additionally, this Instant Pot Tex-Mex Mac & Cheese is very inexpensive meal. Plus, it can be stretched to feed the whole family. It’s also great for meal prepping on the weekends for an easy lunch during the week!

Slow Cooker Easy Pork Carnitas Tacos

Easy pork carnitas tacos (Mexican pulled pork) cooks slowly in orange and lime juice and then is broiled or fried to create crispy and juicy flavorful bites!

So far during Mexican March, we’ve made a slow cooker meatless dish, a chicken dish, and a beef dish. To round out our slow cooker meat preparation, we have a pork dish: tacos filled with Easy Pork Carnitas!

Pork Carnitas is the Mexican version of Pulled Pork. Traditional Carnitas are made by braising pork in lard or oil. Many Americanized recipes have been adapted for the home cook and do not use large amounts of lard or oil. In fact, the only oil used in this recipe is about a tablespoon or two used at the end to fry and crisp up the meat.

To make this recipe, liberally season a pork roast with a flavorful spice rub. Then, cook the meat slowly in orange and lime juices until the meat is tender and flakes easily. Finally, broil or fry the meat to create crispy and juicy flavorful bites!

If you know me, it’s no secret I LOVE beans! When I am eating in a low-carb phase, beans are one of the things I miss the most. I could never go low-carb for the rest of my life because I would miss beans too much. They are one of those foods that feels so good when I eat them, and they are so satisfying. Although, I know it’s not that way for everyone… haha.

I remember the first time I had REALLY good refried beans at a local Mexican restaurant. The experience was other worldly! Prior to this experience, I only had beans out of a can, or bland homemade beans from a restaurant.

This Slow Cooker (or Instant Pot) Refried Beans recipe mimics those epic and flavorful beans I had at that local Mexican restaurant. I am so happy I found this recipe from Erin at Well Plated because now I don’t have to go to this restaurant just for the beans anymore!

To prove my point, when I was preparing the beans, my husband asked me what I was making. When I told him I was making refried beans, he said, “No, you’re not! You have onions and jalapenos cut up.” I replied, “Exactly! They will be flavorful beans!” If you have never tried really good refried beans, you need to try this recipe!
