Copycat Chili’s Cajun Chicken Pasta is made by combining penne pasta and Cajun chicken in a rich and flavorful cream sauce and topped with fresh tomatoes!
Have you ever been to a restaurant and ordered something so delicious, you knew you had to create it at home? That is the way I feel about Chili’s Cajun Chicken Pasta. The first time I ever had it, I was addicted. I knew I would never be able to rest until I learned how to make it at home.

Strawberry Shortcake just screams summer is here! It is such a family-favorite dessert!
Growing up, my mom always found the best, fresh, locally grown, pallets of sweet strawberries. Inevitably, our family would enjoy strawberry shortcake and homemade jam prepared from those fresh strawberries. Whenever I eat strawberry shortcake, all those family memories come rushing back to me.
A secret ingredient makes these finger-licking, baked low-carb garlic butter Parmesan chicken wings stay juicy and have an extra-crispy skin without frying!
I’ve been pushing myself outside my comfort zone by preparing foods I dislike or have avoided for years. There are some foods I still don’t like, but I have discovered other foods I really enjoy now! I’m so proud of myself for challenging my preconceived notions by giving foods another chance.
Wings are one of those foods I gave a second chance, and I’m so glad I did! I never expected I would love eating meat off the bone. The meat stays juicy, the skin is crispy, and the garlic butter Parmesan sauce takes these wings over the top! While this recipe is not low calorie, it is low-carb friendly.
Do you want know how many times I have made this low-carb chocolate lava cake? Well, I can’t tell you because I stopped counting… I make this single-serving dessert whenever I have a chocolate craving (whether or not I am eating low-carb). It is so rich and delicious you would never know you were eating something with around 2 grams of carbohydrates. Plus, you can make this ooey-gooey chocolate lava cake with less than 7 ingredients in less than 7 minutes!
Due to an unfortunate event when I was about 13 years old, I avoided broccoli soup for a long time. My dad made broccoli cheddar soup for dinner, and I kept finding little black “things” in my soup. Rather than eat the soup, I kept moving it around in my bowl inspecting the black things until I found one that had long legs… Ugh!!! By the time I made my “discovery”, my brother and my dad had already devoured their bowls of soup. My dad had not properly washed the broccoli while preparing the soup, and there were lots of little black bugs living in the florets of the broccoli. My whole family was thoroughly disgusted, and we threw away the uneaten soup. So, the moral of the story when using fresh broccoli is to wash your broccoli well!
A few years ago, I got the “bug” to try broccoli soup again. I have so many favorite recipes for other vegetable soups including potato soup, carrot soup, and cauliflower soup, and I wanted to give broccoli soup one more chance.
Peachy oat cups are one of my favorite breakfasts to meal prep. They come together in less than 10 minutes with only 20 minutes of cook time. Although, you don’t only have to eat these for breakfast. Peachy oat cups make a great snack or dessert too!
