Copycat Del Taco Carnitas Loaded Fries tastes better homemade and can be made whenever the craving hits! Don’t forget the secret sauce!
To this day, my husband fondly describes the summer when he discovered Del Taco’s Carnitas Loaded Fries. For him, it was one of the worst summers he ever had. However, those fries were one of the things that helped him get through the hard times.
Ground beef, cheese, rice, green peppers, onions, tomatoes, and Mexican spices come together to make the best Beef Spanish Rice side dish or full meal!
Growing up, my family always complained when my dad made his Beef Spanish Rice. As a kid, I didn’t like the green peppers and onions in his recipe. It wasn’t until later in my life that I learned to appreciate my dad’s recipe.

To save money, and to feed our girls a more healthy treat, I set out to make my own homemade dog treats.
Yesterday (March 23rd) was National Puppy Day! This day was established by Colleen Paige in 2006.
National Puppy Day is a special day to celebrate the magic and unconditional love that puppies bring to our lives. But more importantly, it’s a day to help save orphaned puppies across the globe and educate the public about the horrors of puppy mills.

My husband and I recently welcomed a new puppy into our home! We have a 3 1/2 year old Bernese Mountain dog named, Snugglepumpkin (Snugs for short), and we felt it was time for her to have a sister. Orla was born on January 9, 2019, and she came home with us on March 1, 2019.
Snugs and Orla (March 2019)
If you are here, I’m sure you know how fun AND difficult it can be to train a new puppy. Everything is a brand new experience for them, and they are continually learning!
When 1 1/2 year old Snugs came home with us, it took us about 4 months to fully train her. Unsurprisingly, we are still in the process of training Orla. Thankfully, she has potty training down!
Buying training treats all the time can be very expensive, and many of the ingredients used in the treats are not very wholesome or “natural”. In an effort to save money, and to feed our girls a more healthy treat, I set out to make my own homemade dog treats.
Due to an unfortunate event when I was about 13 years old, I avoided broccoli soup for a long time. My dad made broccoli cheddar soup for dinner, and I kept finding little black “things” in my soup. Rather than eat the soup, I kept moving it around in my bowl inspecting the black things until I found one that had long legs… Ugh!!! By the time I made my “discovery”, my brother and my dad had already devoured their bowls of soup. My dad had not properly washed the broccoli while preparing the soup, and there were lots of little black bugs living in the florets of the broccoli. My whole family was thoroughly disgusted, and we threw away the uneaten soup. So, the moral of the story when using fresh broccoli is to wash your broccoli well!
A few years ago, I got the “bug” to try broccoli soup again. I have so many favorite recipes for other vegetable soups including potato soup, carrot soup, and cauliflower soup, and I wanted to give broccoli soup one more chance.
