Meet a new sandwich you are sure to love: the Parmesan-Crusted Sourdough Turkey Sandwich. I know my mom and I fell in love with it the first time we had it! This sandwich is full of unique flavors you wouldn’t expect would go well together, but it’s so delicious. Truly, this is a grown-up grilled turkey sandwich.

If you are new to the blog (or if you’re not), welcome! If it’s not your first time, you know I love creating my favorite restaurant foods at home. Especially when I can’t easily access them. This recipe is no exception.

This sandwich is inspired by one you can find at the Lake Yellowstone Hotel. In their Lake Hotel Dining Room, they serve a very similar sandwich. When we visit, my mom and I both love to order it for lunch and take in the beautiful view across the lake. I’m those memories are why I love this sandwich so much, and I’m excited to share it with you!

Dinner in a Pumpkin is a casserole cooked right inside a pumpkin! As you serve it, scrape out the tender pumpkin to eat along with the delicious filling!

I get SO excited for Halloween! One of the things I always look forward to is Dinner in a Pumpkin, or pumpkin casserole. Since this dish is seasonal, it’s always really special when I get to eat it. So, I make it as often as I can while pumpkins are still available.

To make dinner in a pumpkin, prepare the casserole filling ingredients. Then, stuff the pumpkin, and bake. As you serve the casserole, also scoop out portions of the pumpkin to eat! After dinner, just throw the pumpkin away! Since there are no casserole dishes, clean-up is so easy.

Speaking of which, why are pumpkins not available AFTER Halloween?! You can find so many other seasonal types of squash. Why not pumpkin? Maybe, if more people make this dish, we don’t have to waste all the after-Halloween pumpkins with a pumpkin smash. #savethepumpkins

Even if you are not a fan of pineapple on pizza, you should give these sheet pan pineapple chicken fajitas a try! They are absolutely delicious! Due to the pineapple and BBQ sauce, it gives the chicken fajitas a sweet and sour vibe. Such a fun tropical twist on the original!

Because this is made on one sheet pan, clean up is quick. Plus, it can be prepared in advance for healthy lunches or dinners throughout the week.

To this day, my husband fondly describes the summer when he discovered Del Taco’s Carnitas Loaded Fries. For him, it was one of the worst summers he ever had. However, those fries were one of the things that helped him get through the hard times.

My husband also still remembers the devastation when he went to Del Taco after the summer was over, and Del Taco no longer carried his beloved fries. He learned Del Taco only carries Carnitas Loaded Fries for a limited time!

The following summer he anxiously looked forward to the return of the Carnitas Loaded Fries, but they never returned. They didn’t return the summer after that, and the summer after that, and the summer after that! My husband began to wonder if the fries would ever come back. He even reached out to Del Taco on Twitter asking about when they would return, and he received a response that they might never come back.

That’s where I come in. My husband related his history with Del Taco’s Carnitas Loaded Fries to me, and I set out to find what was in them and how to make them.

So, without ever trying Del Taco’s Loaded Carnitas Fries, I developed this recipe my husband and I can make whenever the craving hits!

In the summer of 2018, Del Taco brought back their Loaded Carnitas Fries, and I was finally able to try them. I have to say my version is better than theirs, and my husband agrees!
