Ingredients
10ozFrozen Peaches*
2tbspButterSalted**
2 1/2tbspMaple Syrup***
1 cupOatsRolled or Quick
1tspVanilla Extract
1tspCinnamonGround
1/8tspStevia
1/8tspSea Salt
Instructions
Preheat oven to 375°F.
Divide peaches between six, 4" ramekins, or add all peaches to an 8" x 8" pan.
In a medium bowl, add butter and maple syrup and microwave for 20-30 seconds until butter is melted.
Add remaining ingredients to the bowl and mix until fully combined. Adjust salt and sweetener to your preference.
If using Ramekins, divide the mixture into 6 portions (about 1-2 tablespoons). Top peaches with oat mixture.
Bake for 20 minutes, or until the oats are lightly golden and the peaches are soft.
Notes
These are best eaten warm out of the oven or reheated. I love serving with a side of yogurt.If reheating, microwave each portion of the peachy oat cups in the microwave for 1 minute. *4 lbs of peeled fresh peaches can be substituted (about 4 medium peaches)**Can sub coconut oil for dairy-free***Can also use honey or other liquid sweetener
