Baked Crisp Bean Burritos

Ingredients

  • 16 oz Refried Beans Cold
  • 1 cup Cheddar Cheese Grated
  • 3 tbsp Taco Seasoning
  • 1-2 tbsp Enchilada Sauce or Hot Sauce
  • 1-2 tsp Seasoned Salt
  • 1/4 tsp Black Pepper, ground
  • 6-8 Soft Taco Flour Tortillas
  • Cooking Spray
  • Salt

Instructions

  • Preheat oven to 400 degrees. Spray half-sized baking sheet (13 x 18 x 1 inch) with cooking spray.
  • Add refried beans, cheese, taco seasoning, enchilada sauce, seasoned salt, and black pepper to a mixing bowl and stir until ingredients are fully mixed. 
  • Divide bean mixture evenly on each tortilla, and roll up tortilla from one side. 
  • Place rolled burrito seam side down on a baking sheet.
  • Spray burritos with cooking spray, and sprinkle the outside of the burritos a small amount of salt.
  • Bake 13-18 minutes until burritos are golden brown on the tops and edges. 
  • Serve warm with Mexican Ranch Dressing.

Freezer Meal Prep Tip: After assembling bean burritos, place on a baking sheet seam side down. Freeze for 1 hour. Add burritos to freezer gallon plastic bag, and freeze for up to 1 month.
